Since the late 1990s, House of Arras wines have garnered widespread acclaim from critics and the public. A by Arras is a classic blend of the three Champagne grape varieties: Pinot Noir, Chardonnay, and Pinot Meunier. After a second fermentation in the bottle and racking under pressure, the wine ages on the lees for three years, before undergoing a further stabilization phase in tanks and then in bottle. The result is a mature and complex wine that reveals a medium-intense straw yellow color enhanced by a fine and persistent perlage. The aromatic profile is intense and layered, with initial notes of red fruits and citrus zest followed by spicy hints of brioche and nougat, with a few spicy and saline touches. On the palate, it is soft and lively, savory, and refreshing. It has a creamy texture and a brisk acidity that lingers on the long finish. Try it with vegetable or shrimp tempura, oysters, and sushi.
